This delicious side dish was simply potatoes cut into strips and fried in beef tallow. <em>Those were the days\u00e2\u20ac\u00a6<\/em><\/p>\n<p><em><a href=\"http:\/\/www.engrevo.com\/blog\/wp-content\/uploads\/2011\/04\/french_fries.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-377\" title=\"french_fries\" src=\"http:\/\/www.engrevo.com\/blog\/wp-content\/uploads\/2011\/04\/french_fries.jpg\" alt=\"\" width=\"452\" height=\"175\" srcset=\"http:\/\/www.engrevo.com\/blog\/wp-content\/uploads\/2011\/04\/french_fries.jpg 565w, http:\/\/www.engrevo.com\/blog\/wp-content\/uploads\/2011\/04\/french_fries-300x116.jpg 300w\" sizes=\"auto, (max-width: 452px) 100vw, 452px\" \/><\/a><br \/>\n<\/em><\/p>\n<p>Fast forward to 1990, when the artery-clogging combo of <a href=\"http:\/\/en.wikipedia.org\/wiki\/Ancel_Keys\">Ancel Keys<\/a> and <a href=\"http:\/\/en.wikipedia.org\/wiki\/George_McGovern\">George McGovern<\/a> have created a culture unfriendly to familiar fats we fancied \u00e2\u20ac\u201c the saturated variety. With their <a href=\"http:\/\/www.youtube.com\/watch?v=v8WA5wcaHp4&amp;feature=player_embedded\">irresponsible application of flawed logic<\/a> <strong>they convinced Americans that McDonald\u00e2\u20ac\u2122s should ditch the animal fats in their fryers in favor of industrial seed oils, ensuring that American health would continue to decline significantly for the next 40 years<\/strong>. <em>Oops.<\/em><\/p>\n<p><em><!--more--><\/em>McDonald&#8217;s uses <a href=\"http:\/\/www.marksdailyapple.com\/dear-mark-canola-oil\/\">Canola<\/a>(ish) oil in their fryers. Here&#8217;s a breakdown (<a href=\"http:\/\/www.marksdailyapple.com\/healthy-oils\/\">courtesy MDA<\/a>):<\/p>\n<p style=\"padding-left: 30px;\">61% MUFA<br \/>\n21% Omega-6 PUFA<br \/>\n9-11% Omega-3 PUFA<br \/>\n7% SFA<\/p>\n<p><em>If you need a refresher course on why to avoid these seed oils, read the section on <a href=\"http:\/\/www.engrevo.com\/blog\/evolutionary-eat-this-not-that\/\">this page<\/a> titled, &#8220;Easily Oxidized Oils.&#8221;<\/em><\/p>\n<p>After a few years of frying in the new corn and soy squeeze (<em>doesn&#8217;t sound so appetizing, does it?<\/em>), we realized that heating these newfangled oils produced \u00e2\u20ac\u0153trans-fats,\u00e2\u20ac\u009d extremely deleterious partially hydrogenated fats not present in nature (in appreciable amounts). <strong>In an effort to avoid saturated fat (which is actually <em>good<\/em> for you), we introduced absurd amounts of actually dangerous trans-fats.<\/strong> <em>Oops.<\/em><\/p>\n<p>The modern nutritionistic solution to the trans-fats problem, <em>of course<\/em>, is to engineer canola without trans-fats. McDonald&#8217;s <a href=\"http:\/\/www.msnbc.msn.com\/id\/16873869\/\">announced in 2007 that they planned to phase out the trans-fats<\/a> (you know, because you can&#8217;t just switch the oil overnight). <strong>This may solve part of the problem, but there are still a great many reasons not to consume seed oils <\/strong>(high Omega6 content, easily oxidized, often rancid before they reach the store or kitchen&#8230;).<\/p>\n<p><strong>Unfortunately, restaurant french fries won\u00e2\u20ac\u2122t get a pass for regular consumption until the fryers are converted back to animal fat.<\/strong> Lucky for us, we can still <a href=\"http:\/\/www.engrevo.com\/blog\/chock-full-o-meals\/\">make our own fries at home<\/a>, cooking them in whatever healthy fats we choose (coconut oil and bacon grease are two great choices). <strong>These should be enough to hold you over until the majority wises up and forces McDonald\u00e2\u20ac\u2122s back in time \u00e2\u20ac\u201c to healthy french fries.<\/strong><\/p>\n<div style=\"float:left;margin-right:10px;\"><iframe allowtransparency=\"true\" frameborder=\"0\" scrolling=\"no\" src=\"http:\/\/platform.twitter.com\/widgets\/tweet_button.html?url=http:\/\/bit.ly\/fsV35f&counturl=http:\/\/www.engrevo.com\/blog\/manic-monday-french-fry-follies\/&text=Manic Monday: French Fry Follies&count=none&lang=en&via=engrevo&related=\" style=\"width:55px; height:20px;\"><\/iframe><\/div><div id=\"wp_fb_like_button\" style=\"margin:5px 0;float:none;height:25px;\"><script src=\"http:\/\/connect.facebook.net\/en_US\/all.js#xfbml=1\"><\/script><fb:like href=\"http:\/\/www.engrevo.com\/blog\/manic-monday-french-fry-follies\/\" send=\"false\" layout=\"standard\" width=\"450\" show_faces=\"false\" font=\"arial\" action=\"like\" colorscheme=\"light\"><\/fb:like><\/div>","protected":false},"excerpt":{"rendered":"<p>It is 1949, and McDonald\u00e2\u20ac\u2122s has just added french fries to the menu at their only location.
