Breakfast for Dinner and Pork Tenderloin

Last night, the girlfriend made deliciously cheesy eggs and bacon – a pretty common meal around these parts. However, this time she made a chopped cucumber and tomato salad drizzled with olive oil and lemon juice. It was wonderful.

Lately, we’ve been forcing some variety on ourselves by purchasing the cheapest cuts of meat at the grocery store and coming up with ways to use them each night. The girlfriend threw this super-cheap pork tenderloin in the cast iron skillet, then covered it with oil, rosemary and garlic. After a quick sear on the stove, it went into the oven at 350 for about 40 minutes. We enjoyed it with more steamed and buttered spaghetti squash.
